Quinoa, Grape, and Avocado Salad topcook.tomathouse.com
Ingredients:
- 4 cups cooked quinoa, cooled
- Juice and zest of 1 lime
- 3 tbsp. l. olive oil
- 2 cups white grapes, halved
- 1.5 cups diced cucumbers
- 0.5 cup fresh mint, coarsely chopped
- 0.5 cup fresh parsley, coarsely chopped
- 4 green onions, white and light green parts, chopped
- 1 avocado, diced
Preparation:
- In a large bowl, combine the lime zest and juice with olive oil. Taste and season with salt and pepper.
- Combine quinoa, grapes, cucumbers, mint, parsley, onion, and avocado and drizzle with dressing. Serve chilled with grilled lobster.
