Kid-Friendly: Asparagus Marinara

Ingredients:

  • 5 large eggs
  • 1 tbsp Dijon mustard
  • 1/4 tsp granulated garlic
  • 0.5 cup plain breadcrumbs
  • 1/4 cup + 1 tbsp grated Parmesan
  • 1 bunch asparagus, tough ends trimmed (about 450 g)
  • 1 tbsp. premium flour
  • 1 tbsp extra-virgin olive oil
  • 1 cup heated marinara sauce
  • 4 large fresh basil leaves, torn

Preparation:

  1. Position a rack in the lower third of the oven and preheat the oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper.
  2. In a shallow bowl, combine 1 egg, mustard, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and granulated garlic. Mix in another shallow bowl. breadcrumbs and 1/4 tbsp. parmesan
  3. In a medium bowl, toss the asparagus with the flour. Dip the asparagus in the egg mixture, shake off any excess, coat in the breadcrumb mixture (pressing it in if necessary), and transfer the spears to the prepared baking sheet. Bake until tender and lightly browned, 20 minutes.
  4. Crack the remaining 4 eggs into individual bowls. Heat the olive oil in a large nonstick skillet over medium heat, then carefully pour as many eggs as will fit into the skillet. Cook until the whites are set but the yolks are still runny, about 4 minutes.
  5. Pour 1/4 cup marinara sauce onto each of 4 serving plates. Divide the asparagus evenly among the plates and top with an egg. Sprinkle with the remaining 1 tablespoon Parmesan and basil.

    Note
