Vegan Vanilla Walnut Cookies

Ingredients:

  • 1.5 cups premium wheat flour
  • 0.75 tbsp. confectionery flour (low gluten flour 8-9%)
  • 3 tbsp. l. tapioca flour
  • 2 tsp baking powder
  • 0.5 tsp fine salt
  • 0.5 tsp xanthan gum
  • 1.5 cups vegan sugar or organic unbleached cane sugar
  • 0.5 tbsp. apple sauce
  • 0.5 cups raw organic coconut oil, melted
  • 3 tablespoons grape seed oil
  • 2 tsp vanilla extract or 2 vanilla pods, seeds scraped out
  • 0.5 tsp apple cider vinegar
  • 1.5 cups chopped walnuts

Preparation:

  1. Preheat oven to 190°C. Line a baking pan with parchment paper and set aside.
  2. In a medium bowl, whisk together flour, baking powder, salt, and xanthan gum.
  3. In a large bowl, combine the sugar, applesauce, coconut oil, grapeseed oil, vanilla, and vinegar and beat on low speed for about 1 minute. Add the flour mixture to the bowl with the wet ingredients and mix well, adding 1/3 cup of water if needed. Stir in the chopped nuts.
  4. Drop heaping tablespoons of dough onto the baking sheet, spacing them 2.5-3 cm apart. Bake the cookies in two batches, two baking sheets at a time, until the dough is set and beginning to brown around the edges, 18-20 minutes.

    Remove from the oven and let the cookies cool on the baking sheets for 2 minutes, then transfer to a wire rack and let cool completely. Bake the remaining cookies as directed above.
