Creamy Sweet Potato Soup topcook.tomathouse.com
Ingredients:
- 2 large sweet potatoes, peeled and diced (about 900g)
- 2 tbsp (30 g) butter
- 3 cloves garlic, finely chopped
- 1 sweet Vidalia onion, finely chopped
- A 1 cm piece of ginger root, peeled and finely chopped
- 1 smoked jalapeño (chipotle) pepper, marinated in adobo
- 4 tbsp. chicken broth
- 1.25 cups unfiltered apple juice without added sugar
- 3/4 cup heavy cream
- Sour cream, for garnish (optional)
Preparation:
- Add the butter to a large soup pot over medium heat. When the butter is melted and foaming, add the garlic, onion, and ginger and sauté until softened and fragrant, 3–4 minutes. Season with salt and pepper. Add the chipotle pepper and sauté for another minute, breaking it up with a wooden spoon.
- Pour in the chicken broth, apple juice, and sweet potatoes. Bring to a simmer and cook until the sweet potatoes are tender, about 20 minutes.
- Puree the soup with an immersion blender until smooth and velvety. Finally, stir in the heavy cream. If using sour cream, spoon it over each bowl of soup.
