Pears in ginger tea syrup with lemon topcook.tomathouse.com
Ingredients:
- 4 Barlett or Anjou pears, peeled, cut in half, with the core removed
- 2 tbsp of water
- 2 bags of green tea
- Zest and juice of 2 lemons
- 5 cm fresh ginger, peeled and sliced
- 1.5 cups of sugar
- 3 tablespoons of honey
Preparation:
- In a large saucepan, heat water until hot, but do not bring to a boil. Add tea, lemon zest, lemon juice and ginger and keep at a low boil for one minute.
- Then add the sugar and honey and bring back to a gentle simmer. Add the pears and cover the surface of the liquid with parchment paper (to ensure the water covers the pears, otherwise they will float) and cook for 5 minutes.
- Remove the pan from the heat, but do not remove the pears from the liquid. Cool the pears in the syrup until ready to serve.
- Pears can be served separately, with ice cream (or yogurt for breakfast), or the syrup can be reduced to a glaze and served with the pears on cakes.
