Ingredients:
Dip sauce
- 1/4 cup mayonnaise
- 1 tbsp. horseradish
- 2 teaspoons ketchup
- 1/4 tsp Cajun seasoning (dried garlic, spice mix, salt, dried onion, paprika, crushed red pepper)
Pickled cucumbers in batter
- Vegetable oil, for deep-frying
- 1/2 cup wheat flour
- 1 3/4 teaspoons Cajun seasoning
- 1/2 tsp. Italian seasoning (oregano, thyme, basil, rosemary and sage)
- 1/4 tsp cayenne pepper
- Coarse salt
- 2 cups sliced pickled cucumbers
Preparation:
- Prepare the sauce: mix mayonnaise, horseradish, ketchup and in a bowl Cajun seasoning.
- Fry cucumbers: Pour 2.5 cm of vegetable oil into a frying pan and heat to a moderately high temperature (190 °C).
- Meanwhile, in a large bowl, combine flour, Cajun and Italian seasonings, cayenne pepper, 1/2 teaspoon salt, add 1/2 cup water and mix until smooth. Drain. pickles paper towels
- Dip half the cucumbers in the batter. Remove the cucumbers with a slotted spoon, shake off any excess batter, and drop them into the hot oil. Fry until golden brown, 1-2 minutes, and drain on paper towels. Return the oil temperature to 190°C (355°F) and continue frying the remaining cucumbers.
- Serve fried cucumbers with dipping sauce.
