Classic Asian sandwiches with chili mayonnaise

Ingredients:

  • 10 Chinese Steamed Buns or Hamburger Buns
  • 450 g smoked cooked bacon (pork belly), cut into thick slices
  • 3 tomatoes, cut into 1.2 cm slices.
  • 1 cucumber, thinly sliced
  • 1/4 teaspoon Chinese five-spice seasoning
  • 3 tablespoons Chinese hoisin sauce
  • 3 tablespoons mayonnaise
  • 2-3 tsp Sriracha sauce (Asian chili sauce)
  • 1 cup small watercress leaves
  • 2 tbsp chopped cilantro
  • A little rice vinegar
  • 1/8 tsp dark sesame oil
  • Coarse salt

Preparation:

  1. Fry the bacon in a large skillet until crisp, drain on paper towels. Sprinkle with bacon. five-spice seasoning, then tear the slices in half.
  2. Preheat the oven to broil or broil. Place the tomato slices on a baking sheet and brush with half the hoisin sauce. Bake for 3 minutes until bubbly, flip, brush with the remaining hoisin sauce, and bake for another 3 minutes.
  3. In a small bowl, combine mayonnaise and Sriracha sauce. In a medium bowl, combine watercress, cilantro, vinegar, and sesame oil. Add a pinch of salt.
  4. Wet 2 paper towels with water and wring them out. Loosely wrap the Chinese buns in the wet towels, then place them in a large microwave-safe dish, cover with plastic wrap, and microwave in 30-second intervals until hot and soft.

    (You can also warm the buns with steam for 5 minutes.) If you're using hamburger buns, there's no need to warm them.

    Spread a little chili mayonnaise on the inside of the buns. Top each bun with a few slices of cucumber, bacon, and tomato, along with a little watercress mixture.
