Vegan chocolate chip cookies

Ingredients:

  • 0.75 cups premium wheat flour
  • 0.5 tbsp. confectionery flour (low gluten flour 8-9%)
  • 3 tbsp. l. tapioca flour
  • 0.5 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 0.5 tsp fine salt
  • 0.5 tsp xanthan gum
  • 1.5 cups sugar or organic unbleached cane sugar
  • 0.5 tbsp. apple sauce
  • 0.5 cups raw organic coconut oil, melted
  • 3 tablespoons grape seed oil
  • 0.5 tsp apple cider vinegar
  • 1 cup vegan chocolate chips

Preparation:

  1. Preheat oven to 190°C. Line a baking sheet with parchment paper and set aside.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, salt, and xanthan gum.
  3. Place the sugar, applesauce, coconut oil, grapeseed oil, and vinegar in a large bowl and beat with an electric mixer on low speed until combined, about 1 minute. Add the flour mixture to the wet ingredients and mix well, adding 1/3 cup of water as needed. Stir in the chocolate chips.
  4. Drop the dough by the tablespoonful onto the baking sheet, leaving 2-3 cm between each batch. Bake the cookies in batches, two baking sheets at a time, until the cookies are cooked through and beginning to crack on top, 16 to 18 minutes. To ensure even baking, rotate the baking sheet after 10 minutes.
  5. Remove from the oven and let the cookies cool on the baking sheets for 2 minutes, then transfer to a wire rack and let cool completely. Bake the remaining cookies as directed above.

    Make vegan chocolate chip cookies by adding 1.5 teaspoons of ground cinnamon to the flour mixture and stirring in 1 cup of chopped pecans. Bake as directed above.

    Vegan Chocolate Peanut Butter Cookies


    Make vegan chocolate chip cookies by adding 0.33 cups of natural peanut butter Add 1/4 cup of the liquid mixture, increasing the amount of water to two-thirds of a cup. Replace 0.75 cup of the chocolate chips with crushed roasted peanuts.

    Vegan Chocolate Sandwich Cookies with Marshmallow Cream


    Make vegan chocolate chip cookies. Reduce the chocolate chips to 0.75 cups and add 0.75 cups of chopped raw almonds. When the cookies have cooled, place 3 mini marshmallows on each of 18 upside-down cookies and broil for 1 minute. Sandwich the cookies two at a time to create filled sandwiches.
