Ingredients:
For the salad:
- 7 medium potatoes with skin, quartered
- 1 sweet potato sweet potato, peel and chop coarsely
- 1/4 cup mayonnaise
- 1 tbsp Dijon mustard
- 2 tsp onion powder
- 2 tsp garlic powder
- 1/4 tsp ground cayenne pepper
- Coarse salt and freshly ground black pepper
For salad dressing:
- 1 slice of bacon, finely chopped
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 teaspoon Dijon mustard
- 2 feathers green onions, cut into rings
- 2 tbsp chopped fresh parsley
- Coarse salt and freshly ground black pepper
Preparation:
- Preheat the grill to medium. Place the potatoes in a large saucepan and cover with cold water by 2 inches. Bring to a boil and cook for 10 minutes. Add the sweet potatoes. Bring back to a boil and continue cooking for another 10 minutes. Drain and let the potatoes cool.
- In a bowl, combine mayonnaise, mustard, onion powder, garlic powder, cayenne pepper, salt, and black pepper to taste. Once the potatoes have cooled, stir them into the mixture.
- Prepare the salad dressing: Fry the bacon in a skillet over medium heat until crisp, then let it cool slightly. Transfer the cooled bacon and its rendered fat to a large bowl.
Add olive oil, vinegar, and mustard and whisk until emulsified. Add green onions, parsley, salt, and black pepper to taste, and whisk again.
- Place the potatoes on the preheated grill and cook, turning, for 1-2 minutes per side. Transfer the potatoes to a bowl with the dressing and toss. Serve the grilled potato salad warm or chilled.
